Easy Eggnog Cake with Eggnog Icing

A few weeks ago I gathered with a group of amazing women at the beautiful home of Janna from Yellow Prairie Interiors. All of us live close to each other and have connected through the wonderful world of Instagram.

We chatted and laughed and shared stories and broke bread together and made a Christmas craft. I came away with my heart filled to overflowing. There is just something about connecting with women who you not only really and truly like, but who also share your creative passions.

At the end of the night one of my new friends, Debbie from the Instagram page All Things New Interior Designs, gave us all the recipe for her family’s favorite holiday treat, Eggnog Cake.

Now, I realize that eggnog is not for everyone. But, at our house, it’s a staple this time of the year. I even joked to my husband the other day that I’m pretty sure that eggnog is our teenage son’s love language.

So, I knew that this would be a hit with my family and sure enough, it was! I put my own little twist on Debbie’s recipe and topped the cake with eggnog icing which honestly I could have just eaten straight out of the bowl. It was beyond delicious!

So, with Debbie’s permission, I’m sharing her Eggnog Cake recipe with you here today and perhaps it will become a new addition to your family’s favorite holiday treats as well.

Easy Eggnog Cake with Eggnog Icing

Easy Eggnog Cake with Eggnog Icing

Ingredients

  • For the cake:
  • 1 pkg yellow cake mix
  • 1/8 tsp. nutmeg
  • 2 eggs
  • 1 1/2 cups eggnog
  • 1/4 cup melted butter
  • 1/4 tsp. rum extract
  • For the icing:
  • 2 cups powdered sugar
  • 3-4 tbs. eggnog

Instructions

  • Cake instructions: Preheat oven to 350. Grease bundt pan. Mix all ingredients in large bowl. Bake for 40 minutes and allow to completely cool before adding the icing.
  • Icing instructions: Put powdered sugar in bowl and slowly add the eggnog mixing as you go until you get the right consistency. Adjust by adding more powdered sugar or eggnog as needed. Spoon over the top of the cooled cake letting it drip over the sides.

There is something so special about having someone share a family recipe with you and integrating it into your own family recipes. You feel honored that they would let you into a part of their heritage.

This blending of traditions, and the way it bonds us together, is something I’m coming to appreciate more and more as I get older. Perhaps this eggnog cake will become a new tradition in your home as well.

As we head into this last week before Christmas, may you find time to slow down and enjoy the old traditions and maybe even make way for some new ones!

Who knew that instagram would have been a way to meet people that you truly enjoy being around and have an instant bond with! Cooking and baking is another passion of mine. I love to cook for people.
