Fall in the Willamette Valley is amazing! Beautiful weather with temperatures slowly cooling down, trees covered in the colors of Autumn and leaves crunching under our feet as we walk around the neighborhood. And, a plethora of places to pick (say that five times fast) apples, plums, pears, tomatoes and really every kind of fruit or vegetable your heart may desire.
The other day my daughter and I met my dad at one of my parent’s favorite farms and we picked and picked to our heart’s content…okay…actually we picked until we were too hot and sweaty to want to pick anymore but we still came away with a wonderful variety of apples and pears and even some beautiful zinnias.
Labor Day was that weekend and I needed something to bring to our family gathering so I decided to put those apples to good use and combine them with one of my most favorite desserts of all time. Bread pudding!
Ingredients
- 6 slices of day old bread (french, sourdough or even brioche works great)
- 2 cups of heavy cream
- 3 eggs
- 1 teaspoon vanilla
- 1 tablespoon bourbon (optional)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- For the apples:
- 3 peeled and chopped apples of a tart variety
- 1 cup brown sugar
- 3 tablespoons flour (or corn starch)
Instructions
- Preheat oven to 350
- Cut bread into cubes and place in a greased 8 1/2 x 11 baking dish
- Whisk together in a bowl the eggs, cream, vanilla, rum, cinnamon and nutmeg and then pour it over the bread cubes. In a separate bowl, mix together the apples, brown sugar and flour/corn starch. Pour the apple mixture on top of the bread mixture making sure to spread the apples evenly across every part of the bread mixture.
- Bake for 45 minutes. Enjoy!
This apple bread pudding was just the perfect way to start the transition from summer to fall by blending together all of the best of both seasons in one yummy dish!
Now, if you know anything about the Willamette Valley and have been watching the news lately, you are aware of just how much of Oregon has been on fire. Friends, it’s been devastating. We are truly heartbroken by the loss of land, property and, most importantly, the loss of lives. Here in the valley we have been surrounded by fires but our city has, thankfully, not had to evacuate but many have in the surrounding areas and the Detroit Lake area, where we spend time each summer, has been almost completely wiped out. Our hearts ache for all of those affected and we continue to have very thick smoke right outside our doors. If you think of it, would you be praying for everyone along the west coast who is being impacted by the fires and for all of the first responders who are doing everything they can to save as much as they can.
I’m so grateful for this community and that I know I can come to you with prayer requests like this!
