Pumpkin Pie Biscotti with Apple Cider Icing

Recently I’ve realized something very important about pumpkin flavored things.

People either love them or hate them. There seems to be no in-between here. And every year around this time battles are waged in the war between the pumpkin flavor lovers and the pumpkin flavor haters.

Social media is flooded with the intense opinions of both sides of this issue. Some people wildly cheering for the arrival of pumpkin spice lattes while others bemoaning the fact that they are slammed from all sides with pumpkin this and pumpkin that.

But, friends, can’t we all just get along? I mean, have to believe that we can find common ground here.

Can we celebrate our mutual appreciation of fall and maybe even celebrate pumpkins just for their own sake?

Just for the fact that they come in all shapes, sizes and colors. Kind of like…ahem…all of us. 😉

So, if you read the title of this blog post and thought, “OH YUM!! Another pumpkin flavored thing! I just love pumpkin flavored things and this biscotti sounds delicious and I’m going to go make it right now so that I can enjoy one more pumpkin flavored thing!”

Or you read the title of this blog post and thought, “SHEESH!! I’m so sick of pumpkin flavored things and here is just one more pumpkin flavored recipe I’m going to have to ignore and way to ruin perfectly good biscotti with making it pumpkin flavored!”

Maybe, just maybe, you could see this as an opportunity to call a truce of sorts. An opportunity to just agree to disagree about pumpkin flavored things.

And perhaps instead, we could see this as an opportunity to agree that every season has things about it we like and things about it we don’t like.

Pumpkin Pie Biscotti with Apple Cider Icing

Pumpkin Pie Biscotti with Apple Cider Icing

Ingredients

  • For the Biscotti:
  • 2 3/4 cups flour
  • 1 cup of sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla extract
  • For the icing:
  • Fresh Apple Cider
  • Powdered Sugar

Instructions

  • Preheat oven to 350
  • In a large bowl, sift together flour, sugar, salt, baking and spices. In another bowl whisk the eggs with the pumpkin puree and vanilla. Pour the pumpkin mixture into the dry ingredients and stir just until ingredients are mixed together. It should have a crumbly consistency.
  • Dust flour over a clean surface and onto your hands before turning mixture onto it and kneading gently a few times. Place on a greased or parchment lined baking sheet and then form into a log approximately 12 inches long and 6 inches wide. The loaf should be fairly flat so only about 2 inches high.
  • Bake for 20-25 minutes or until the center springs back. Remove from oven and cool for 10 minutes. Using a serrated knife cut into 1 inch slices. Reduce oven temp to 300 and then finish baking for another 20 minutes depending on how crispy you like your biscotti. Allow to cool completely before applying the icing.
  • For the icing: Mix together 1 cup of powdered sugar and 1 tablespoon apple cider. Drizzle over the top of the biscotti

Each season has things we want to celebrate. And each season has things we aren’t thrilled with. Case in point, this is about the time of the year when I am reminded that my nose must be abnormally large and protruding because it seems to always be cold. But I’m able to counter that with using that same nose to inhale the wonderful scents of the season.

It’s kind of like life isn’t it? There is rarely a season in our lives when every.single.thing is perfect. Where everything is just right. The good is always tempered by the not so good. And I think that is just how it should be. Because that’s the only way that we can truly appreciate those good things, right? That is how the things we love and want to celebrate stand out from the rest of life.

So pumpkin flavor lovers and pumpkin flavor haters, I can’t ask you to join hands with me. And we can’t sit around a campfire together and sing Kumbaya. But, let’s declare that on this day, October 8, 2015, we stand united.

Because, all we are saying is…give pumpkin peace a chance! 😉

    Now it’s funny but I hate pumpkin pie but I do enjoy other pumpkin things, maybe because the flavor is less intense in lattes, cookies etc? These look so good!

      That’s so true Lauren! Actually the pumpkin flavor in this biscotti is very subtle and nicely camouflaged by the icing. Extra sugar always makes everything better right? 😉

    I love anything pumpkin and can hardly contain myself until the pumpkin products come out. If you really want a fix on pumpkin products – Trader Joe’s has amazing products. Love their pumpkin spice coffee, yum.

    Their pumpkins are very reasonable and unusual shapes. Sometime here in So CA it is hard to find great different shape and color pumpkins.
    But, I am finding due to our very hot weather and drought the fresh pumpkins are rotting quick;y.

    These look so good!!!! I just discovered pumpkin spice mini wheats and love them. Pretty sure I should buy a bunch to stash away. I wish I wasn’t already sneaking away to take a peek at blogs, Pumpkin Palooza looks like it would suck me right in! I can’t wait for some semi-alone time tomorrow night, heehee! (Semi-alone; mom speak for all but the two little ones will be out of the house, and I will put a movie on for them!!)

When I was a little girl we took a trip to Silver Dollar City theme park in Branson, MO. One of the attractions there is the Marvel Cave. The whole theme park was actually built right around the cave! I will never forget the feeling of descending into the darkness. We had to walk down a steep, narrow path and I could feel the rocky walls beginning to close in on me. From time to time, our guide would even have to call out for us to duck our heads so as not to whack them on rocks that were jutting out. And just when it felt like we had been walking forever; just when it felt the most narrow and the most dark; just when we were starting to get really weary from navigating this path, we turned the corner and found ourselves awestruck as we gazed at this enormous room. Everywhere we looked there were stalactites and stalagmites. Lights had been installed and they reflected off of these formations creating the most beautiful colors on the walls. There were pools of water in a shade of aquamarine I had never seen before and waterfalls flowing from upper levels. That long, winding, damp trek had been so very worth it. The descent into darkness had revealed light…and life!

My prayer for you friends, is that you will look at that narrow path with the small gate as an opportunity. It’s an opportunity to experience the kind of freedom that our souls are longing for. The wide and broad path of the world promises us a freedom that is fleeting and temporary. But at the end of the narrow path, there is hope and peace and life everlasting.

I’m choosing the narrow path. And in spite of the hardships, in spite of the challenges and the fears and the times that can feel as dark as the journey down into a cave, I wouldn’t trade a single minute of it.

I can’t properly express how much joy it gives m I can’t properly express how much joy it gives me to know that my family loves being home. After a weeklong vacation, we all feel so happy to be back in our haven. As a homemaker in the truest sense of the word (the maker of a home), knowing my husband and children consider this the place where they feel the most relaxed and at peace means all of my intentions and efforts in this area are worthwhile. It’s not perfect and WE are not perfect by a long stretch. But, it’s where we feel the most free to be imperfect. And that makes it pretty wonderful! 🌱

Extreme rain and cooler temperatures followed by extreme heat then back to cloudy and rainy. But the silver lining is that when the sun finally does reappear we definitely don’t take it for granted. We are SO happy with how they turned out and it finally looks like I’ve always envisioned. Our quick fix years ago (scroll to see the before photo) never felt quite right but now? The month of June is coming to a close and it has The month of June is coming to a close and it has been JAM packed! The highlight by far though was my son's graduation from high school. When I started blogging, he was only 6 years old and some of you have been apart of my community here for that entire time. Now, he's 19 and there is a reason parents are told not to blink because the years truly do go faster than I ever could have imagined. He has become such an incredible young man we are so excited to see how God is going to unfold the next chapter of his life. We celebrated with parties galore (SO many open houses to attend!) and made memories we'll forever cherish. My mama heart was filled to bursting with the joy of it all! Now we're taking some time to just enjoy these warm, summer days making even more memories because, when you’re at this stage of parenting, you know all too well how much you need to grasp every opportunity to spend time together.
