Summer in Oregon is just absolutely glorious. We are rewarded for enduring the days of rain with beautiful sunshine and blue skies and here in the Willamette Valley it feels like we are getting to experience a little slice of heaven.
Farm stands pop up overflowing with every kind of summer fruit or vegetable you could possibly want and the berries…oh the berries. Sigh…they are so magnificent they almost make me ache. Ok, actually my stomach does sometime literally ache from eating too many of them but they are just so tempting!
And in our family, blackberries are a particular favorite. Around here they are put in yogurt, cereal, pies, popped into your mouth as you’re walking past the bowl and most of all, turned into blackberry cobbler.
My mom has been known to put on dish gloves and climb up a step ladder so that she can dig through the prickly branches to get to all of those blackberries that are dangling just beyond our regular reach. It almost makes our hearts hurt to see all of those juicy morsels hanging there and know that no one will ever get to enjoy them.
My husband rivals my mother in this obsession for blackberries (they’re like blackberry junkies!) so making the cobbler in these ramekins keeps the “hogging” to a minimum by giving everyone the same portion size.
I know there are MANY cobbler recipes out there but have you ever made it using Golden Grahams cereal? This was a very happy accident for me one day when I went to the pantry to pull out my cobbler ingredients and realized that I didn’t have any graham crackers.
A quick scan of the shelves provided the perfect solution! If I can use graham crackers in my cobbler, why couldn’t I use Golden Grahams cereal?
And since I’m slightly addicted to Golden Grahams cereal and my husband is slightly addicted to blackberries…
…this recipe seemed to be almost as much of a match made in heaven as we are!
Ingredients
- 1 cup Golden Grahams cereal, finely chopped/crushed
- 3/4 cup packed brown sugar
- 1/2 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup butter melted
- 1/2 tsp. ground nutmeg
- 1 tsp. cinnamon
- 2-3 cups fresh blackberries
Instructions
- Place small handful of blackberries on bottom of each ramekin.
- Mix all ingredients together and pour over top of blackberries and gently pat/press down.
- Place ramekins on cookie sheet filled with 1 cup of water to prevent burning the bottoms of the ramekins.
- Bake at 350 for 20 minutes.
- Serves 6
