When you live in the PNW, you know that you will have to accept the reality of rain. But, just when I think that I’ve accepted that reality, we get an exceptionally wet spring and you start to wonder if you will ever see the sun shining for more than a few minutes at a time. So, I decided that if the sun wasn’t going to hang out for very long outside my window then I was going to create a little bit of sunshine inside!
I had some strawberries that I needed to use up so I made these yummy muffins and topped them with a lemon glaze. Here’s the recipe!
Strawberry Muffins with Lemon Glaze
Ingredients
- 2 cups Flour
- 3/4 cup sugar
- 2 tsp baking powder
- 2 eggs
- 1 tsp vanilla
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 1/2 cups sliced strawberries
Instructions
- Preheat oven to 400. Combine dry ingredients in a bowl. Combine wet ingredients in another bowl. Mix together until just combined. Don't overmix. Fold in strawberries. Place paper liners in muffin tins or spray with oil. Fill with batter. Bake for 15-17 minutes. Allow to cool completely before drizzling the glaze. For the glaze: 1 cup confectioners sugar, 1 tablespoon fresh lemon juice (or one tsp of lemon extract), 2 tablespoons milk. Mix and then drizzle on muffins. Enjoy!
Every time I see them they put a smile on my face and give me hope of warmer days ahead! And I need that hope because it’s currently pouring rain as I type these words. Ugh!
