So we love cake in our family. All kinds of cake. In fact I’m not sure I’ve ever met a piece of cake I didn’t like. Which can be a problem. Cake is definitely not one of the healthiest food groups (yes cake is a food group, didn’t you know that?) but it sure is darn good. So while we don’t eat cake everyday around here, we do love to pull out our favorite recipes for the holidays. Below are three cakes that would be perfect to serve with your Easter dinner or really with any spring meal.

Up first, a cake that my family requests every year. My Quick Coconut Pineapple Cake. I love this cake. L.O.V.E. this cake. It is a very dramatic, special looking cake but couldn’t be easier to make.
There should be no surprise that I found this recipe in Southern Living Magazine, (the magazine I do a little jig at the mailbox over when it arrives.) And, I’ll let you in on a little secret…it’s not “from scratch” but everyone will think it is.
Up next I have a cake that’s quite a bit different from the Quick Coconut Cake but every bit as delicious. This cake combines three wonderful flavors..Lemon, Thyme and Cornmeal for a bright and fresh taste! With a beautiful glaze and the addition of berries, this Lemon Thyme Cornmeal Cake will be a great ending to Easter dinner…
and I have it on good authority that it’s delicious with a cup of coffee the next morning. smile.
This last cake was one I made more recently, but I think would also be perfect for Easter dinner. It is a fun take on the traditional and popular Pineapple Upside Down Cake. I say it’s pineapple upside down cake turned upside down.
Not only is this cake round (where the traditional upside down cake is square) but it is a two layer cake!
Aren’t those layers just beautiful!? It is such a light and fruity cake. And you will definitely receive oohs and aahs when your dinner guests get a glimpse of the layers.

Two layer pineapple upside down cake?? Oh, that one is a keeper. I need to show this to my mom. She makes the best upside down cake in the universe. Really… the universe took a vote, and she won.
She does hers in a cast iron skillet. I need to show this to her. Imagine TWO layers of one of my favorite cakes.
