I’ve been wanting to share this great dip I made the other day. I adapted it from one featured in the January edition of Southern Living Magazine. Have I told you how much I {heart} Southern Living Magazine? I have? Okay well you get to hear it again. I LOVE Southern Living Magazine!
So the original sounds so delicious and I will share that recipe with you as well, but I had to adapt the recipe for ingredients I had on hand well…because we had a snow storm and Bama Boy didn’t find dip a compelling reason to venture out in ice and snow. I tell ya what though, I was really pleased with my version of the dip! So maybe you can give both a try and tell me which one ya like better. Or you could just make mine…and I’ll feel all warm and fuzzy inside cause you think my dip is as good as Southern Living’s. Either way make this dip…you’ll love it!

Baked Southwest Cheese Dip-adapted from Southern Living Magazine
Ingredients:
1 1/2 cups mayonnaise
1 can hot Rotel tomatoes with chillies
1/4 cup chopped green onions
1 (8-oz.) block extra-sharp Cheddar cheese, shredded
1 (8-oz.) block pepper Jack cheese, shredded
Serve with: French bread cubes
Preparation:
1. Preheat oven to 350°. Stir together first 3 ingredients in a large bowl; stir in cheeses. Spoon mixture into a lightly greased 2-qt. baking dish.
2. Bake at 350° for 20 to 25 minutes or until dip is golden and bubbly. Serve with French bread cubes.

Baked Tex-Mex Pimento Cheese Dip-original Southern Living Magazine
1 1/2 cups mayonnaise
1/2 (12-oz.) jar roasted red bell peppers, drained and chopped
1/4 cup chopped green onions
1 jalapeño pepper, seeded and minced
1 (8-oz.) block extra-sharp Cheddar cheese, shredded
1 (8-oz.) block pepper Jack cheese, shredded
Garnish: fresh cilantro leaves
Serve with: French bread cubes
Preparation:
1. Preheat oven to 350°. Stir together first 4 ingredients in a large bowl; stir in cheeses. Spoon mixture into a lightly greased 2-qt. baking dish.
2. Bake at 350° for 20 to 25 minutes or until dip is golden and bubbly. Garnish, if desired. Serve with French bread cubes.

You know, I JUST had a finger food potluck thingie to attend. I wish I had seen this beforehand. It would have been a good thing to bring. I could have pretended that I was a good cook because it looks delicious and easy.

This looks so good! I love Southern Living too! I’ve got every Southern Living Annual Recipes since 1978! I got the collection from my grandmother and then added to it year by year!
